Curry Cauliflower Rice Recipe at New Leaf Inspired LivingWith the holidays leaving us an extra bit *stuffed* (at least me!), this is the best time to start detoxing and introducing healthier alternatives to our favorite recipes!

Cauliflower rice has been one of my absolute FAVORITE carb switches! My family and I love rice (I mean with an Egyptian & Cuban household combination, that is pretty much a staple in every dish!) and we don't even miss it when we make our cauliflower rice!

I adapted this recipe from the December/January issue of Bon Appetite Magazine recipe I had found and wanted to make a healthier version of. The ingredients pack a ton of healthy benefits and will definitely do the body good!

I will be honest, it wasn't always easy to master the art of making cauliflower rice, and there are times when we only had a pile of mush before us, but I will share what works for me the best below. I will add that I typically buy the bagged fresh cauliflower that is already riced for the sake of time. You can do it yourself, but I prefer the already riced type!

For this dish you will need:

  • I bag organic cauliflower
  • 2 tbsp. Avocado Oil
  • 1 shallot
  • 2 finely grated garlic cloves
  • Curry powder (amount to your taste, I use about 1 tbsp)
  • Ground Tumeric (same as curry)
  • Ground Coriander
  • ½ cup organic unsweetened coconut oil
  • Fresh lime juice
  • ¼ cup cilantro
  • ¼ cup mint
  • Yogurt for serving, optional
  • Roasted pumpkin seeds
  • Raisins (optional)

Directions:

  1. Heat oven to 400 degrees F
  2. Once heated, place cauliflower on sheet pan, evenly spread out
  3. Place in oven until slightly browned (this step helps cauliflower not to mush but crisp a bit instead)
  4. Meanwhile, heat oil in large skillet and add shallots, garlic and curry/turmeric/coriander and cook about 30 seconds
  5. Add coconut milk and lime juice
  6. Add cauliflower rice (once baked) and cook about 3 minutes
  7. Season with salt to taste
  8. Add in cilantro/pumpkin seeds/mint and toss
  9. Serve with yogurt if desired!

That is it! You can make a side of Chicken Tikka (do you want a good recipe for that?) or add in garbanzo for some protein but this is DELICIOUS!
